Different from the usual ice cream, Turkish ice cream is made with the addition of mastic resin and salep powder. These two change the structure of the ice cream and lower its melting point. Turkish ice cream makers also use large paddles to knead the ice cream to build on the elasticity. So that's the secret of why Turkish ice cream has stretchy and chewy texture!
Too bad in NYC there are not many places where you can get Turkish ice cream. The only place I know is Victory Garden in West Village. Do you guys know where else to buy Turkish ice cream? Please do let me know because I have been craving for it!
